Lollygag 4 oz. Fresh grapefruit juice 4 oz. Tequila- Silver or Blanco 1 oz. Butterfly Pea Simple Syrup: see recipe 1 oz. Fresh lime juice 2 oz. Club soda or sparkling water- chilled 2 Large ice cubes preferred (or a couple of regular ice cubes) Kosher salt or sea salt for rim of glass 2 Lime peel twists for garnish Fill a cocktail shaker with ice. Add the grapefruit juice, Reposado tequila and lime juice and shake well. Use a lime wedge to rub on one edge/side of each glass, then rotate that edge on a small plate with kosher salt on it. Add one large ice cube to each glass. Strain your chilled cocktail into each tumbler, add a lime twist and serve! • Double the recipe if you are using larger glasses. • You can ditch the grapefruit juice and soda and use a grapefruit soda instead if you’re in a hurry. • This Butterfly Pea syrup is great for many cocktail, cocktails, or daily tea.
