This brilliantly blue Butterfly Pea simple syrup recipe is not only spectacular in color but chock-full of
amazing health benefits! Butterfly Pea is known as a super food and filled with antioxidants and
has also been used for centuries in Asia as an anti-inflammatory, non caffeinated tea and
as a great memory enhancer, brain booster, and stress reliever.

Ingredients

1/2 C. Granulated sugar

1/2 C. Water

1.5 -2 Tsp. Butterfly Pea Tea Powder (We used Suwirun Premium Organic Butterfly Pea Powder which can be found easily on Amazon)
Directions
Add the sugar and water to a small saucepan over medium heat.
Heat and stir until sugar is dissolved.
Next add the Butterfly Pea powder and bring to a soft boil for 1-2 minutes, stirring until the powder has dissolved and is well incorporated.
Let cool, then pour into a glass jar or cruet and seal tightly with a lid. Your Butterfly Pea simple syrup will keep, refrigerated, for about one month.
Recipe Note
• You can use this syrup for many many things from craft cocktails to teas, or mix in your glass of sparkling water for an extra pop of color and flavor.
• You can also use the left over powder for milk tea, as a natural food dye or in rice dishes.
