Strawberry Mojito

Strawberry -Lime Syrup (Can be prepared ahead of time for ease.) Adjust depending on sweetness level. ½ a large lime - juiced 6- 8 fresh mint leaves- torn About 1 cup ice cubes, crushed if preferred. Club soda or sparkling water (Like Topo Chico) 1-2 Fresh mint leaves 1 Fresh Strawberry Lightly muddle the mint and strawberry syrup in the bottom of a sturdy shaker about 10 times or until the fragrance begins to come out from the mint. Add the rum and lime juice and shake it up a few times until combined. Pour into a highball glass filled with crushed ice. Top with club soda and stir using a straw gently to distribute the mint. Garnish with a fresh strawberry and mint leaf. • You may want to use more syrup depending on what kind of sparkling water or club soda. • I recommend preparing the syrup ahead of time, it take about a half hour and this syrup is a great add to lemonade, sparkling water or other beverages and cocktails.
