With a bright pop of passion fruit, making it the perfect way to ring in a sparkling, joy-soaked year ahead. Lollygag 3 oz. Quality Gin 6 oz. Champagne 1 Fresh lemon- juiced plus peel for garnish 1 oz. Passion Fruit Syrup Garnish with decorative lemon peel (see notes) Place all ingredients except for the champagne into a cocktail shaker with ice and vigorously shake until combined. Strain into a coupe glass or champagne flute and top with champagne. Garnish with decorative lemon peel and serve. To create a decorative lemon peel garnish: • Carefully use a paring knife to peel a 2" by 2" piece of the lemon peel. • Flip it peel side down on a cutting board and gently scrape the white part down so that it's thin enough to cut with an exact blade. • Using a pen or pencil, draw out your design- geometric, leaves, or any design that is not to intricate on the back side of the peel. • Then using a sharp exacto knife or paring knife ( I have found that the exacto is easier and you will be able to cut out smaller pieces with greater ease) cut along your outline of drawing. • Once you have finished your design, use a tiny clothes pin to attach it to your glass of choice, or you can make a small slit in the middle of your design to slide onto your glass.French 21
