Cherry Bomb Cocktail

Lollygag 5 oz. Citron Vodka 1.5 oz. Fresh Lemon juice .5 oz. Black Cherry Syrup 4 drops of Rosewater (optional) 4 Fresh Black Cherries 1.5 oz. Cointreau 1 Egg white-Pasteurized 8-10 Chocolate dipped cherries (see notes) or black cherries. 2 Lemon peels- thinly cut Prepare your chocolate dipped cherries and chill for 20 min.(See notes) Muddle 4 black cherries in a cocktail shaker to release the juices. Then add all ingredients except the garnishes to a shaker with ice and shake vigorously until the egg white is nice and frothy. Strain into a martini or coupe glass and carefully spoon the foam on top. (Alternatively, you can use a whip cream canister to whip your egg whites.) Garnish with a black cherry that has been dipped in chocolate.(prepared ahead of time) and serve the rest on the side as a sweet treat. Chocolate Dipped Cherries: Ingredients: 8-10 large seedless cherries or if seeded make sure to warn your guest of seeds. 2 oz. Premium Semi-Sweet chocolate 1-2 Tbsp. Pink sprinkles (optional) Preparation: • First, line a small plate or baking sheet with parchment paper. • Then, melt your chocolate pieces in a small double broiler or in a small pan placed over a small pot of simmering water. • Stir frequently until chocolate is smooth. • Remove from heat and carefully dip each cherry into the chocolate rotating to coat. • Then dip each bottom of cherry into the bowl of sprinkles to add a pop of color if desired. • Place the plate of cherries in the refrigerator for at least 20 min. to chill.
