Kolaczki (Polish Stuffed Cookies)

The dough is simple and can be chilled overnight if needed to break up the baking time. These cookies are so easy to customize to your preference. Alexis Grabel-whatalexiscooked 4 ounces cream cheese, room temperature ¾ cups unsalted butter, room temperature ¼ teaspoon salt 1.5 cups (180 grams) all-purpose flour ½ cup preserves in your choice of flavor Powdered sugar for dusting In a medium-sized bowl, cream butter and cream cheese. Sift in salt and flour, then stir to combine. Wrap dough in plastic wrap and chill in the fridge for one hour or up to overnight. Thirty minutes before the chilling time is finished, preheat oven to 350°F. Roll dough into 1/8th inch thickness then cut into two-inch squares or stamp out squares with a two-inch square cookie cutter. Place ¾ teaspoon jam in the center of each square. Fold two opposite corners over the jam and press to seal. Bake for 12 minutes, until the cookies are lightly browned. Allow cookies to cool completely on a wire rack. Dust with powdered sugar and serve. * Fill with your favorite jam flavor or even a chocolate spread! To finish the cookies, dust with powdered sugar or drizzle on a powdered sugar glaze.
