Ingredients

1/2 A large seedless chilled watermelon

1/2- 3/4 C. Of cubed or crumbled Feta Cheese (Israeli preferred)

Juice of 3 limes- about 1/2 -3/4 Cup

1 Tsp. Kosher salt

Fresh ground black pepper

1/4 Cup of Extra virgin olive oil

1 Cup fresh chopped Mint leaves

Quality Balsamic Vinegar- Optional
Directions
Cut rind off of watermelon and cube into 1” cubes.
In a small bowl whisk together your olive oil, lime juice, salt and pepper.
In a large bowl add watermelon and pour dressing over it.
Add the feta cheese and mint, then gently mix to coat your watermelon.
Chill in refrigerator until ready to serve.
Assembly:
When ready to serve, drizzle Balsamic vinegar over salad for added tangy pop.
Serve immediately on a large serving platter.
Recipe Note
For those adventurous souls- try this as a boozy salad soaked in vodka and omit the balsamic vinegar.
- Same recipe as above but replace the olive oil with 1/4-1/2 vodka and add 1/4 Cup fresh squeezed orange juice.
- Add the feta cheese and mint and gently mix to coat your watermelon
- Cover and chill for at least 1 hour
- Serve chilled
