Color Me Happy Baked Donuts

All-purpose flour: Sifted 1 C. Cake Flour: Sifted 1 C. Granulated sugar 1/2 Tsp. Bourbon Vanilla( or Pure Vanilla) 2/3 C. Buttermilk 2 Tbsp. Cereal Milk 4 Tbsp. Un Salted Butter-Melted 2 Tsp. Baking Powder 1/2 Tsp. Salt 2 Eggs plus 2 egg yolks- Beaten 4 Tbsp. Cereal Milk (see recipe below) 3/4 Tsp. Vanilla Extract 2 C. Powdered Sugar: Sifted A rainbow assortment of food colorings ( we used classic and neons) White food coloring 1/2 C. Corn Flakes- Toasted 1/2 C. Frosted Corn Flakes- Toasted ( You can use all plain corn flakes if you prefer less sweet results.) 1 C. Milk 1/2 C. Semi Sweet Chocolate Chips 1/4 Tsp. Instant Coffee 1 Tbsp. Coffee Liquor 2 Tsp Light Corn Syrup 2 Tbsp. Butter 2-3 Tsp.Hot Water Preheat oven to 375 degree F. Spread the corn flakes on a baking sheet and place them into the preheated oven for 2-3 min. to slightly toast. Then, remove the pan from the oven and place 1/2 of the corn flakes into a small bowl and add 1 cup of milk. Reserve the rest for toppings later. Let the corn flakes steep in milk for 20 min. while you prepare your donuts. First sift together the flours, sugar, baking powder, and salt into a large bowl and set aside. Next in another large mixing bowl, combine the lightly beaten eggs, vanilla, buttermilk and cereal milk. Combine using a hand held or stand mixer on medium speed for 1-2 minutes, then add the melted butter last while it is still warm. Mix for another 1-2 minutes or until your mixture is smooth. Next add the dry ingredients and mix by hand with a wooden spoon until combined. (Note: Do not over mix the donut batter or they will be tough.) Then using a batter dispenser or spoon, carefully fill the lightly greased donut pans to 2/3 full. ( If you are using cake pop pans fill the bottom pan to the line and cover with the top pan securing it with the silicone fasteners.) Place the pans in the oven and cook for about 10-12 minutes. If they are not quite done, then cook for 1-2 more minutes, or until a toothpick comes out clean when checking them. When they are done, remove donuts from the oven and let them cool for 5 minutes before placing them on a cooling rack to fully cool. Prepare your toppings and glazes and gather your sprinkles if you choose to add. Once your donuts are fully cooled, you can begin decorating them. Prepare your glaze by combining In a medium microwavable bowl, the chocolate chips, butter, and corn syrup. Microwave on medium high power for 20 seconds, stir, then repeat for another 15-20 second intervals until the chocolate chips are melted. Then add the instant coffee, coffee liquor, and very hot water- 1 Tsp. at a time to the chocolate mixture stirring until you have a nice smooth ganache. Carefully dip the tops of your donuts or submerge the donut holes into the warm ganache to fully coat and place them onto a cooling rack to set. Sprinkle with any colorful sprinkles of choice. or drizzle them using a spoon with colored glaze to create fun stripes & patterns before the ganache sets. Make your cereal milk glaze by whisking together the sifted powdered sugar, vanilla, and cereal milk. Add the cereal milk 1 Tbsp. at a time until you have a smooth glaze. Then add 1-2 drops of white food coloring and mix well. Divide the glaze evenly among 3-4 medium shallow bowls that are wide enough to place the donuts flat, top side down in. Place 1 drop of 2-3 different colors of food coloring into each bowl and carefully using a toothpick, gently swirl the colors in the bowls to create a tie-dye effect. Carefully dip the tops of the donuts or roll the donut holes into the tie-dye mixtures and place them onto the cooling rack to set. You can add any sprinkles at this time too. Make your cereal milk glaze by whisking together the sifted powdered sugar, vanilla, and cereal milk. Add the cereal milk 1 Tbsp. at a time until you have a smooth glaze. Then add 1-2 drops of white food coloring and mix well. add 1-2 drops of white food coloring, and mix well. Dip the tops of your donuts into the glaze and sprinkle with toasted corn flakes that have been crunched up, or submerge the donut holes into the glaze, and roll each one in the toasted corn flakes. Set them on a cooling rack to set. • When glazing the donuts, place cooling racks over baking sheets to collect the excess glaze drips. • You can easily omit the coffee liquor and use 1/2 Tsp. of Vanilla extract instead for a simple chocolate ganache.Color Me Happy Donuts
