Homemade Waffle Corn Dogs

A super snack for lunch and your kiddos without the guilt! This yummy finger food also makes a great party snack with an array of dipping sauces perfect game night or birthdays. lollygag 5-6 Hot dogs-beef, chicken, or pork 1 Large egg ½ C. All purpose flour ¼ C. Cornmeal (We used Red Mill organic medium ground whole grain) ¼ C. plus 2 Tbsp. Milk ¼ Tsp. Salt ½ Tsp. Baking powder 1 ½ Tsp. Granulated sugar A non stick waffle corn dog griddle ( We used Lumme which can be found on Amazon) Non stick spray PInch of Salt for garnish 10-12 small wood skewers ¼ C. Sweet BBQ Sauce (We used Sweet Baby Rays) ½ C. Honey Mustard Dressing (We used Ken’s Steakhouse.) 1-2 Tbsp. Spicy Hot Honey (We used Mike’s Hot Honey) This can be optional. Preheat the waffle iron while you prepare the batter. Lightly beat the egg in a small mixing bowl, then add the remaining ingredients and combine until you have a smooth, slightly thick batter. If you have a waffle iron with small pockets then cut your hot dogs in half. Insert the skewers about half way up into the hot dogs and set aside. Spray the waffle iron lightly with cooking spray. Spoon batter into each cup- about 1/2-2/3 full and place the hot dogs on top rotating slightly to cover the hot dogs with batter then spoon a small amount more on top to fully cover. ( Make sure not to over fill or they will overflow.) Close the waffle iron and cook for about 2-3 minutes. Check to see if they are getting golden brown, if not then continue to cook for another few minutes. Flip them once they’ve started to brown and cook another 1-2 minutes or unto batter is set and they are golden brown. Remove and repeat process until your batter is gone. Once done you can sprinkle with a pinch of salt and either serve warm with dipping sauces of choice. See Notes below. Combine all ingredients in a small bowl for serving- or store in an airtight container in the refrigerator until use. • You can store in an airtight container in the fridge and reheat in a preheated oven on low (350F) for 5-8 minutes, just spray the lightly with cooking spray and sprinkle with salt before placing in the oven on a baking sheet. • Serve warm with different dipping sauces such as ketchup, mustard, cheese sauce or try the Spicy BBQ-Honey Mustard.Homemade Waffle Corn Dogs
