Ingredients

8 Roma tomatoes- Ripe and chopped into 1/4" pieces

4 Garlic cloves- Peeled and finely minced

1/4 C. Fresh Parmesan cheese-Shredded

1/4 C. Fresh Basil- Cut into tiny ribbons(see notes)

1/4 C. Extra Virgin Olive Oil

1/8 C. Balsamic Modena Vinegar

2 Tbsp. Fresh lemon juice

1/4 Tsp. Salt

3-4 Grinds of fresh cracked pepper

1 Large French baguette
Directions
In a large mixing bowl, combine all ingredients.
Give it a good gentle stir to mix well.
Cover and place in refrigerator for at least 2 hours, but for best results overnight.
Slice your baguette into 1/2" slices. (Slice bread at an angle to get longer pieces)
Place them oil side down onto a heated grill pan for about 3-5 minutes to get a nice charr and grill marks.
Remove and sprinkle with seas salt.
Alternatively you can place them onto a large baking sheet and brush with olive oil.Sprinkle with sea salt and place into a preheated oven to 350 degrees F. for about 5-10 minutes to toast.
Once your bread is nicely toasted, remove tomato mixture from fridge.
Spoon a generous scoop onto each slice and arrange onto a serving tray of choice.
Garnish with a sprinkle of fresh Parmesan cheese and serve immediately.
