Swedish Snowball Cookies

These little bites of joy(A.K.A-Mexican Wedding Cookies) are perfect for any holiday gathering or great for a sweet lil' nibble with a warm cup of coffee/tea, or a delicious hot toddy! Lollygag 1 Cup Unsalted butter (2 Sticks -slightly melted) 4 Tbsp. of Powdered sugar plus more for dusting later 2 Tsp. of Pure Vanilla extract (we use Vanilla Bourbon from Trader Joe’s) 2 Cups All purpose flour 1 Cup Walnuts- (Raw-no shell) Chopped 1 Cup of Pecans- (Raw-no shell) Chopped (Candied pecans are also yummy.) 1/4 Tsp. Salt Preheat oven at 400 degrees Fahrenheit Combine your butter, salt, vanilla, and sugar with a hand mixer until creamy. Then, add the flour, nuts and combine with a wooden spoon until it holds together- you may need to use hands at this point. (messy time!) Roll your cookie dough into quarter size balls and place on a un-greased baking sheet, or parchment lined sheet evenly spaced apart. Place in oven on center rack and bake for about 10-13 minutes until light golden brown, but not too brown. Remove from oven and let cool for 5 minutes or so, then gently roll each cookie in the powdered sugar to coat evenly and place on parchment lined cooling rack. (see notes) Serve warm with coffee/tea or box them up for family & friends! • Be sure to coat your cookies in powdered sugar while they are still hot/warm so that the sugar sticks. • These should store well if in a zip lock bag pr sealed container for 1-2 weeks.Swedish Snowball Cookies
