Recipe Preparation:

      1. Preheat your oven to 400 degrees F.
      2. Make your slaw by-See above. •
      3. Prepare Char Sui sauce and spicy mayo and set aside-See above.
      4. Prepare your meatballs:
      5. Peel and coarsely grate your potato and place on a large paper towel and squeeze out as much moisture as you can.
      6. In a large mixing bowl combine your ground pork, ground turkey(or beef), and potatoes.
      7. Scooping with clean hands, make small round meatballs around the size of a golf ball and place 2 inches apart on a large lipped baking sheet.
      8. Season with salt and pepper.
      9. Place on the middle rack of your oven and cook for about 15-20 minutes or until they begin to brown.
      10. Remove from oven and generously brush Char Sui sauce over all of the meatballs and cook for another 5-10 minutes.
      11. For added char- place under broiler for 2-3 minutes on high, keeping an eye on them to keep from burning.
      12. Remove from oven and check one to make sure they are cooked through.
      13. If ready, remove meatballs and set aside.

      1. Cut each roll from the top and carefully pull open & scoop some of the bread from the middle out and discard. Place rolls on a baking sheet.
      2. Lightly spray the rolls with olive oil spray and place them in your oven for about 2-5 minutes on 350 degrees F.
      3. Remove and let cool.
      4. Slather about a teaspoon or more of spicy mayo onto each roll.
      5. Place 2-3 meatballs in rolls.
      6. Drain your pickled slaw and take a small handful and place on top of the meatballs.
      7. Garnish with a generous amount of fresh cilantro and serve hot.
Serve along with lime wedges and Sriracha on the side for added heat and homemade potato chips-see link.

Make sure to use wet hands when forming your meatballs to keep the meat from sticking to your hands.
